Thank you for your patience and, again, I am so truly sorry for the inconsistency. My brain and time has been preoccupied with equipment repairs, electrical wiring, and supply chain / shipping issues.
Just as we are settling into our new kitchen and getting to a place where we are happy with the masa, the salsas, and the environment, we are changing things up. We are changing things up in a very good and exciting way. Our new Campbell Machinery molino arrived!!!!
This is a huge moment for me and a literal dream come true. I dreamt about having one of these molinos years ago, when starting a masa project was but a whisper of an idea. As some of you know, I starting Bolita hand grinding masa in my home kitchen in San Francisco, using a Victoria hand cranked mill. Then, on a trip to Mexico City, I bought a Nixtamatic, a slightly better option for home grinding. Although it allowed me to grind up to 10 lbs of masa in an hour, the best part of the machine was the name itself. It was unreliable and produced subpar masa.
In 2020, when I started Bolita in earnest, I purchased a Molinito and this was definitely an upgrade, though had a lot of issues. I’m on my 3rd machine, and it takes us hours to grind masa. It is finicky, unreliable and does not produce a great masa. It makes good masa, but the stones are quite small and the auger doesn’t love to pull in my maíz (I don’t rinse/scrub the maíz 100% because I believe the pericarp add elasticity and fiber). I am so happy that this little molino helped us grow, but I cannot wait to use it as decoration and stop relying on it for day-to-day operations.
This may be too much to ask, but keep supporting us weekly. As we grow our team and continue to build this project, we really need consistent support. Even if its a jar of salsa macha for a friend visiting town, telling your friend to try some fresh masa, or just making tortillas regularly. We appreciate you and we want to keep getting better, but we need consistent support. Thank you!!
