POP-UPS
So… our last pop-up at The Lede was insanely busy. We were sold out of all food and cocktails within 2.5 hours. I thought I could handle the griddle by myself, I was very wrong. I hate going to a pop-up and waiting in line only to find out that the vendor is sold out of everything. I even turned my partner away.
But, selling out is the only way of sustaining our business and insuring we don’t have food waste. A traditional restaurant that is open several days per week can avoid selling out since they can purchase/prep/make food for several days of continuous operation. Purchased food can roll from one day to the next, specials can be offered, staff meal can incorporate excesses or leftovers. As a “pop-up,” if we have any leftover food, we cannot roll it over into the next service, because that may not happen until the next week or several days later. Pop-Ups should sell out.
That being said, I hate turning people away and I hate feeling like I am a Supreme clothing/merch drop. So, we are prepping much more food and drinks this time around. I am making it my goal to have enough food to last until 7:30/8:00pm, but also to sell out so I don’t lose money. It’s a tricky balance, and I hope you come along for the tight-rope spectacle that is a Bolita Pop-Up.
(Also, I have more help this time, so food will come out in a more timely manner)

THU 4/27/22 - San Francisco CUESA Mission Market 3:00pm-7:00pm. I will do my best to make additional tamales for the market! But we will have masa, tlacoyos, tortillas, salsas, and more. CANCELLED DUE TO STAFFING SHORTAGE
SAT 4/30/22 - POP-UP Dinner, OAKLAND at The Lede 308 41st St, Oakland, CA 94609 4:30pm -Sold Out. We will have salsas and masa for you to purchase as well.
WED 5/4/22 - POP-UP Market, OAKLAND. Preorder for pickups at The Alice Collective 272 14th Street Oakland, 5:30-6:30 pm. Pre-Orders will go live on Friday 4/29 until Tuesday 5/3 12:00pm.
THU 5/5/22 - San Francisco CUESA Mission Market 3:00pm-7:00pm. This will be busy— Cinco de Mayo, so we are making a lot more food. Come through!
